Each year a plant produce new growth (which bloom next year) and an older part of the plant usualy dies off. In this pic, the newest growth is growing towards us, it is flanked in the back by two pseudobulbs from last year, and the one with the hand on it is probably two years old. So story short, hold onto your plants, don't overwater them while they are leafless, and wait a couple of weeks for them to come back.
